Ingredients
• 1 large apple (Honeycrisp, Fuji, or any sweet-crisp variety), cored and sliced into ¼-inch thick rounds
• 4–6 slices of cheese (sharp cheddar, gouda, or even havarti works great), cut or torn to fit the apple slices
• A handful of fresh arugula
• 1 batch Chickpea Salad with Grapes
Mix Ingredient bellow into large bowl
• 1 can (15 oz) chickpeas, drained and rinsed
• ⅓ cup chopped almonds
• ¼ cup celery, thinly sliced
• ⅓ cup red grapes, halved
• ½ cup light mayonnaise
• 1 tablespoon fresh lemon juice
• Salt and pepper, to taste
Directions
1. Prepare the apple base. Core the apple and slice it into circular rounds about ¼-inch thick. These will be your “cracker” base.
2. Layer on the cheese. Place one slice of cheese (or a small piece torn to fit) on top of each apple round.
3. Add the greens. Top each cheese layer with a few fresh arugula leaves for a peppery bite and a pop of color.
4. Scoop on the chickpea salad. Using a spoon or small scoop, add about 1–2 tablespoons of the chickpea salad mixture onto each stack.
