Ingredients
• 470 g bread flour
• 30 g cocoa powder (about ¼ cup)
• 350 g water
• 100 g active sourdough starter
• 8 g salt
• ½–1 cup chocolate chips
• ¾ cup pistachio butter
• ½ cup shredded crunchy pastry (kataifi-style)

Step 1: Mix the Dough
In a large mixing bowl, combine 350 g water and 100 g active sourdough starter. Stir until the starter is mostly dissolved.
Add 470 g bread flour and 30 g cocoa powder, mixing until no dry flour remains. Sprinkle in 8 g salt and mix until a shaggy dough forms.
Cover and let the dough rest for 30 minutes. This rest period helps hydrate the flour and cocoa powder, making the dough easier to work with.
Step 2: Stretch and Folds with Inclusions
After the rest, begin your first stretch and fold. Pull one side of the dough upward and fold it over the center. Rotate the bowl and repeat this motion 3–4 times.
Repeat this process four more times, every 30 minutes.
During the 3rd and 4th rounds, gently incorporate your fillings:
• Mix the shredded crunchy pastry with the pistachio butter
• Add this mixture along with the chocolate chips into the dough as you fold
This method helps evenly distribute the chocolate and pistachio throughout the loaf without tearing the dough.
Step 3: Bulk Fermentation
Allow the dough to rise at room temperature until it becomes puffier, slightly jiggly, and has increased in size by about 30–50%.
This usually takes 3–4 hours, depending on the warmth of your kitchen.
Step 4: Shape and Fill
Lightly flour your countertop and gently turn the dough out.
Fold the edges toward the center, then flatten the dough slightly. Add a few spoonfuls of extra pistachio butter to the center.
Fold the dough over to seal the filling inside. Flip it seam-side down and gently pull it toward you to create surface tension and form a round loaf.
Transfer the dough to a floured banneton or bowl.
Step 5: Cold Proof
Cover and refrigerate for 4–16 hours. An overnight proof is ideal for developing deeper flavor and making the dough easier to score.
Step 6: Bake
Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
Turn the dough onto parchment paper, score the top, and carefully place it into the hot Dutch oven.
Bake:
• 20 minutes covered
• 20–25 minutes uncovered
The crust should be deep brown with a slight sheen and crisp texture.
Step 7: Cool and Serve
Allow the loaf to cool completely before slicing. This step is especially important for chocolate-based doughs to fully set the crumb.
