Step 1: Mix
In a large bowl, mix 350g water and 100g active starter until mostly combined. Add 500g bread flour and ½ box Funfetti cake mix, then mix until no dry flour remains. Add 10g salt and mix until a shaggy dough forms. Cover and let rest for 30 minutes.
Step 2: Stretch & Folds
After 30 minutes, do your first stretch and fold—pull one side of the dough up and fold it over the center. Rotate and repeat 3–4 times.
Repeat this process 4 more times every 30 minutes. 👉 During the last 2 stretch and folds, gently add sprinkles, folding them into the dough without overmixing.
Step 3: Bulk Fermentation
Let the dough rise until it looks puffier, slightly jiggly, and has grown about 30–50%. This usually takes about 3–4 hours total, depending on your room temperature.
Step 4: Shape
Lightly flour your counter and turn out the dough. Fold the edges toward the center, then flip it over and gently pull it toward you to create surface tension. Place into a floured banneton or bowl.
Step 5: Cold Proof
Cover and refrigerate for 8–16 hours (overnight works best).
Step 6: Bake
Preheat your oven to 450°F with a Dutch oven inside for 30 minutes. Turn the dough onto parchment, score the top, and transfer to the hot Dutch oven.
Bake:
• 20 minutes covered
• 20–25 minutes uncovered, until golden brown
Cool & Enjoy 🤍
Let your bread cool completely before slicing—this helps the inside set properly.
You’ll end up with a colorful, slightly sweet sourdough loaf with pops of sprinkles and a soft, fluffy crumb. Perfect for breakfast, dessert, or just a fun baking project ✨
