Strawberry Panna Cotta

Instructions
Make the Strawberry Panna Cotta
1. Prepare the strawberry base
Slice the 4 strawberries and blend them with 2 tbsp sugar and 1–2 tsp lemon sugar until smooth.
Pour the mixture into a small saucepan and simmer gently over medium-low heat for 5–7 minutes, stirring often, until fragrant and slightly thickened. Remove from heat and let cool slightly.
2. Bloom the gelatin
Sprinkle 1¼ tsp gelatin over 1½ tbsp cold water in a small bowl. Let sit for 5 minutes until spongy.
3. Heat the cream mixture
In a saucepan, combine the heavy cream, almond milk, and remaining sugar. Heat over medium-low until steaming but not boiling.
Remove from heat and stir in the bloomed gelatin until fully dissolved. Add vanilla, the strawberry mixture, and rosewater or elderflower if using.
4. Pour and chill
Pour into small cups, jars, or teacups. For a dramatic Bridgerton look, tilt the cups in a muffin tin while chilling.
Refrigerate for at least 4–6 hours, preferably overnight, until softly set and jiggly.
Make the Lemon Sugar Sauce
1. Bloom the gelatin
Sprinkle ¼ tsp gelatin over 1 tbsp cold water and let bloom for 5 minutes.
2. Heat the lemon sugar
In a small saucepan, heat 2 tbsp water with 2–3 tsp lemon sugar over low heat, stirring until dissolved and fragrant. Do not boil.
3. Finish the sauce
Remove from heat and stir in the bloomed gelatin until fully melted. Add the butter and stir until glossy and smooth.
If desired, add a tiny pinch of turmeric or a drop of yellow coloring for a classic lemon hue.
4. Cool slightly
Let cool 5–10 minutes until spoonable.
Assemble & Serve
Once the panna cotta is fully set, gently spoon a thin layer of lemon sugar sauce over each cup. Chill another 20–30 minutes to let it settle.
