Bridgerton-Inspired Strawberry Scone Sourdough (Beginner Friendly) 🍓🍞

Ingredients
• 500 g bread flour
• 350 g water
• 100 g active sourdough starter
• 8 g salt
• 1 cube cold butter, shredded
• 1 box strawberry scone mix
• 2–3 tablespoons strawberry jam

Step 1: Mix the Dough
In a large bowl, combine 350 g water, the strawberry scone mix, and 100 g active sourdough starter. Mix until mostly combined.
Add 500 g bread flour and mix until no dry flour remains. Add 8 g salt and mix until a shaggy dough forms.
Cover and let the dough rest for 30 minutes. This allows the flour to hydrate and makes the dough easier to handle.
Step 2: Stretch and Folds
After the 30-minute rest, perform your first stretch and fold.
Pull one side of the dough upward and fold it over the center. Rotate the bowl and repeat this motion about 3–4 timesaround the dough.
Repeat this process four more times, every 30 minutes.
During the 3rd and 4th stretch-and-fold rounds, gently add the shredded butter — half each time — so it distributes throughout the dough.
Step 3: Bulk Fermentation
Allow the dough to continue rising at room temperature.
You’re looking for the dough to become puffier, slightly jiggly, and increased in size by about 30–50%. This typically takes around 3–4 hours total, depending on the temperature of your kitchen.
Step 4: Shape and Add Jam
Lightly flour your countertop and gently turn the dough out of the bowl.
Flatten the dough slightly into a round. Spread 2–3 tablespoons of strawberry jam across the center.
Fold the edges of the dough toward the middle to seal the jam inside. Flip the dough seam-side down and gently pull it toward you to tighten the surface and create a round loaf.
Place the shaped dough into a floured banneton basket or bowl.
Step 5: Cold Proof
Cover the dough and place it in the refrigerator for 4–16 hours. An overnight cold proof works great and helps deepen the flavor.
Step 6: Bake
Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
Turn the dough onto parchment paper, score the top, and carefully place it into the hot Dutch oven.
Bake:

• 20–25 minutes uncovered
The bread should be deep golden brown with a crisp crust.
