Ingredients
Streusel Topping

• 5 Tbsp unsalted butter, softened
Cookie Dough
• 1 ¼ cups all-purpose flour, leveled
• ¾ cup cake flour, leveled
• 1 tsp cornstarch
• 1 tsp ground cinnamon
• ½ tsp baking soda
• ½ tsp baking powder
• ½ tsp salt
• 8 Tbsp (1 stick) unsalted butter, cold and cubed
• ½ cup packed brown sugar
• ¼ cup granulated sugar
• 1 tsp vanilla extract
• 1 large egg
• 1 egg yolk
Icing
• 2 Tbsp unsalted butter, melted
• 3 Tbsp heavy cream (or milk)
• 1 cup powdered sugar, sifted
• 1 tsp vanilla extract
• Small pinch of salt

Directions
1. Prepare the streusel topping In a small bowl, stir together the flour, brown sugar, cinnamon, and salt. Work in the softened butter using a fork or your fingertips until the mixture resembles coarse crumbs. Chill in the fridge while you make the dough.
2. Preheat the oven Set your oven to 400°F. Line your baking trays with parchment paper or silicone mats for easy cleanup.
3. Mix the dry ingredients In a large bowl, whisk together both flours, cornstarch, cinnamon, baking soda, baking powder, and salt. Set aside.
4. Cream the butter and sugars Using a stand mixer fitted with a paddle attachment, beat the cold cubed butter with the brown sugar and white sugar until smooth and just slightly fluffy, about 1–2 minutes.
5. Add the wet ingredients Mix in the egg, egg yolk, and vanilla extract until fully combined.
6. Bring the dough together Slowly add the dry mixture into the wet, about ¼ cup at a time, mixing only until no streaks of flour remain.
7. Shape the cookies Roll the dough into 9 rounds (or 22–24 smaller ones, if you prefer). Place them evenly on your prepared baking sheets.
8. Add the streusel Gently press a thumbprint or spoon-back indent into the center of each cookie. Spoon in about 1 tablespoon of the chilled streusel mixture.
9. Bake Bake for 8–11 minutes, just until the edges are a light golden color and the centers look slightly underdone—they’ll finish setting as they cool.
10. Optional shaping trick If you want picture-perfect bakery-style cookies, immediately after baking, place a round cookie cutter (or the rim of a glass) around each cookie and gently swirl to smooth the edges.
11. Cool Let cookies rest on the sheet for 5 minutes, then move them to a wire rack to cool completely.
12. Make the icing in a small bowl, whisk together the melted butter, cream (or milk), powdered sugar, vanilla, and salt until silky smooth. Drizzle generously over the cooled cookies.
