How to Make Mexican Wedding Cookies

1. Prepare the Oven and Nuts

Preheat your oven to 350°F and line two baking sheets with parchment paper. Toast the pecans in a dry skillet over medium heat, stirring often, until fragrant. Let them cool slightly, then pulse in a food processor until coarsely ground.

2. Mix the Dry Ingredients

Set aside ¾ cup of the powdered sugar for coating later. In a medium bowl, whisk together the flour and cinnamon.

3. Make the Dough

In a large bowl, beat the butter, remaining powdered sugar, and salt until light and fluffy. Mix in the vanilla and almond extracts. Slowly add the flour mixture, then fold in the ground pecans until a soft dough forms.

4. Shape the Cookies

Scoop about 1 tablespoon of dough at a time and roll into smooth balls. If the dough feels too soft, refrigerate it for about 30 minutes before shaping.

5. Bake and Coat

Bake for 13–16 minutes, just until the bottoms are lightly golden. Let the cookies cool on the baking sheet for about 15 minutes, then gently roll the warm cookies in the reserved powdered sugar.

Serving & Storage Tips

Let the cookies cool completely before serving for the best texture. Store them in an airtight container at room temperature for up to a week. They also freeze beautifully, making them a great make-ahead option.

These classic cookies are proof that simple ingredients can create something truly special. One bite, and you’ll see why they’ve been loved for generations.
