Homemade Red Licorice (Soft & Chewy)
There’s something so nostalgic about red licorice, and making it at home is easier than you might think. This homemade version is soft, chewy, and packed with classic cherry (or strawberry) flavor.
Why All-Purpose Flour?
Whole wheat flour can make licorice too soft and dense. All-purpose flour absorbs more evenly and helps the candy set without becoming mushy.
Ingredients
• 4 tbsp butter
• ½ cup granulated sugar
• ⅓ cup light corn syrup
• ⅓ cup sweetened condensed milk
• Pinch of salt
• ½ cup all-purpose flour (plus 1–2 tbsp more if needed)
• 1 tsp cherry or strawberry flavoring
• 1 tsp red food coloring

Instructions
1. Lightly grease a loaf pan and set aside.
2. In a saucepan over medium heat, combine the butter, sugar, corn syrup, sweetened condensed milk, and salt.
3. Bring the mixture to a gentle simmer, stirring constantly.
4. Using a candy thermometer, cook until the mixture reaches 240°F (soft-ball stage).
5. Remove from heat and immediately stir in the flour and food coloring until completely smooth and combined.
6. Mix in the flavoring until evenly incorporated.
7. Pour the mixture into the prepared loaf pan and smooth the top.
8. Allow the licorice to cool completely at room temperature until fully set.
9. Remove from the pan and cut into strips.
Tips for Perfect Texture
• If the mixture feels very soft after mixing, stir in 1–2 additional tablespoons of AP flour before pouring into the pan.
• Let the licorice cool uncovered for firmer results.
• For extra chew, allow cut strips to air-dry for 1–2 hours before storing.
Storage
Store homemade licorice in an airtight container at room temperature for up to 5–7 days.
