Instructions
1. Make the filling: In a bowl, mix the softened butter and corn syrup until smooth. Gradually stir in the powdered sugar until a thick, dough-like mixture forms.
2. Prepare the cherries: Pat the maraschino cherries dry with paper towels. This helps the filling stick.
3. Coat the cherries: Take a small amount of the sugar mixture, flatten it in your hand, and wrap it completely around each cherry, sealing it well.
4. Chill: Place the coated cherries on a parchment-lined tray and refrigerate for 30–60 minutes, or until firm.
5. Dip in chocolate: Melt the chocolate gently (microwave or double boiler). Dip each chilled cherry into the chocolate, letting excess drip off.
6. Set: Place back on parchment paper and let the chocolate set at room temperature or in the fridge.
Tips
• The centers will slowly turn liquid over a few days—this is normal for cherry cordials!
• Store in an airtight container at room temperature or in the fridge.
• For a smoother look, dip twice once the first chocolate layer sets.
