To begin this delightful bagel-making process, you will need to gather your ingredients meticulously. Start with 11/3 cup of warm water, ensuring that the temperature is just right, around 110°F (43°C), which is ideal for activating the yeast. Next, measure out 1 tablespoon of sugar. This sugar not only adds a hint of sweetness to the bagels but also serves as food for the yeast, promoting a vigorous rise. Following that, you will need 2 ¼ teaspoons of instant quick rise yeast. This type of yeast is particularly convenient as it does not require proofing and can be mixed directly with the dry ingredients.

Once you have combined the warm water, sugar, and yeast in a mixing bowl, stir the mixture gently to dissolve the yeast and sugar completely. Allow this mixture to sit undisturbed for about 10 minutes. During this time, you should observe the yeast becoming frothy and bubbly, indicating that it is active and ready to work its magic in your dough.

After the yeast has risen, it’s time to incorporate the dry ingredients. Add 3 ½ cups of bread flour to the mixture. Bread flour is preferred for its higher protein content, which contributes to the chewy texture characteristic of bagels. Additionally, add 1 ½ teaspoons of salt. Salt is crucial not only for flavor but also for controlling the fermentation process, ensuring that the dough does not rise too quickly.

Mix the ingredients thoroughly until they form a cohesive dough. Once the dough begins to come together, proceed to knead it by hand or with a stand mixer for approximately 5 minutes. Kneading develops the gluten structure, giving the bagels their desired density and chewiness. After kneading, cover the dough with a damp cloth or plastic wrap and let it rise in a warm, draft-free area for about 60 to 90 minutes, or until it has doubled in size.

While the dough is rising, prepare to boil your bagels by bringing 6 to 8 cups of water to a rolling boil in a large pot. To this boiling water, add 1 tablespoon of baking soda. The addition of baking soda to the boiling water is what gives bagels their distinctive shiny crust and enhances their flavor. This step is essential in the bagel-making process.

As the dough rises, you can also prepare your mix-ins. If you desire a spicy kick, chop up your desired amount of jalapeños. Additionally, measure out shredded cheese, which will add a creamy, savory element to your bagels. Once the dough has risen sufficiently, gently fold in the jalapeños and shredded cheese, ensuring they are evenly distributed throughout the dough.

After incorporating the mix-ins, it’s time to divide the dough. Depending on your preference for bagel size, you can shape the dough into 6 to 8 bagels. To shape each bagel, take a portion of dough, roll it into a ball, and then use your thumb to poke a hole through the center, gently stretching it to form the classic bagel shape.

Once shaped, carefully place the bagels into the boiling water. Boil each bagel for no more than one minute on each side. This brief boiling period is crucial as it helps set the crust before baking. After boiling, use a slotted spoon to remove the bagels from the water, allowing any excess water to drain off.

Next, brush each bagel with an egg wash, which is simply a beaten egg mixed with a little water. This will give your bagels a beautiful golden-brown color as they bake. For an extra touch, sprinkle more jalapeños and cheese on top of each bagel before placing them in the oven.

Finally, preheat your oven to 450°F (232°C) and bake the bagels for 20 to 25 minutes. Keep a close eye on them as they bake, as the exact time can vary based on your oven and the size of the bagels. Once they are a deep golden brown and your kitchen is filled with the irresistible aroma of baking bagels, remove them from the oven and allow them to cool slightly before enjoying your homemade creations. GOD bless you. have a blessed day!
