Lemon Apple Posset with Apple Cider Powder (Served in Apples)
If you’re looking for a dessert that’s creamy, citrusy, and a little bit magical, this Lemon Apple Posset is pure autumn comfort in a cup—or better yet, in an apple! It’s made with silky cream, fresh lemon, and a touch of apple cider powder for a sweet-tart balance that feels cozy yet refreshing.
The best part? Instead of traditional ramekins, you pour the posset into hollowed-out apple halves. They look stunning and add a natural apple aroma to every spoonful.
Ingredients (makes about 2–3 apple cups):
• 1 cup heavy cream
• ¼ cup sugar
• Zest of ½ lemon
• 1½ tbsp lemon juice
• ½ tsp apple cider powder (plus more for dusting)
• 2–3 small apples, halved and cored
• Optional: diced sautéed apple bits for texture

Instructions:
1. Slice apples in half and carefully scoop out the centers, leaving sturdy “cups.” Brush the insides lightly with lemon juice to prevent browning.
2. In a small saucepan, heat cream, sugar, and lemon zest. Bring just to a gentle simmer and boil for 2 minutes, stirring often.
3. Remove from heat and stir in lemon juice and apple cider powder until smooth.
4. Strain to remove the zest for a silky finish.
5. Pour the warm mixture into the prepared apple halves.
6. Chill in the fridge for at least 3 hours, until softly set.
7. Before serving, dust with extra apple cider powder or top with whipped cream and a drizzle of caramel.
Each bite melts into a creamy, lemony custard with subtle apple undertones—a perfect cozy-weather dessert that looks as beautiful as it tastes.
