Pumpkin Spice Horchata
If you’re craving something cozy, creamy, and perfectly spiced this fall, this Pumpkin Spice Horchata is exactly what you need. It’s a creamy twist on the classic Mexican horchata—infused with warm pumpkin flavor, cinnamon, and a touch of sweetness that tastes like autumn in a glass. Whether you serve it over ice or enjoy it as an afternoon treat, it’s the ultimate fall drink.
This recipe is simple to make and requires just a few everyday ingredients. The key is soaking the rice overnight so it blends up silky smooth, then combining it with pumpkin puree, sweetened condensed milk, and pumpkin pie spice for that signature fall flavor.

• 1 teaspoon pumpkin pie spice
• 2 cups water

Instructions
Step 1: Soak the rice Start by rinsing your rice until the water runs mostly clear. Place it in a bowl with about 4 cups of water, cover with plastic wrap, and refrigerate overnight. This softens the rice and lets it soak up that subtle cinnamon aroma.
Step 2: Blend the base The next day, add the soaked rice, one cup of its soaking water, the pumpkin puree, and cinnamon sticks to a blender. Blend for 1–3 minutes until smooth and creamy.
Step 3: Strain for smoothness Pour the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher. Strain twice if you like your horchata extra smooth.
Step 4: Add the flavor Stir in the remaining 2 cups of water, sweetened condensed milk, evaporated milk, milk, brown sugar, and pumpkin pie spice. Mix well until everything is fully combined. Taste and adjust the sweetness if you prefer.
Step 5: Chill and serve Refrigerate until cold. Serve over ice and garnish with a cinnamon stick or a sprinkle of pumpkin spice for a cozy finishing touch.
Tips & Variations
• Dairy-free version: Swap the milk for almond or oat milk and use dairy-free condensed milk.
• Less sweet: Use only half the condensed milk or add extra milk to mellow the flavor.
• Make it fancy: Top with whipped cream, a cinnamon stick, or a dusting of brown sugar for a café-style drink.
This Pumpkin Spice Horchata is everything we love about fall—comforting, aromatic, and perfectly sweet. It’s a beautiful drink to serve at gatherings or to sip while watching the leaves change. Once you try it, you’ll be making it on repeat all season long!
