Pumpkin Spice Horchata

Ingredients

• 1 cup long-grain white rice, rinsed

• 2 cinnamon sticks

• 1 cup pumpkin puree

• 1 teaspoon pumpkin pie spice

• 2 cups water

• 1 can (14 oz) sweetened condensed milk

• 1 can (12 oz) evaporated milk

• 2 cups milk (whole or 2%)

• ½ cup brown sugar

Instructions

Step 1: Soak the rice
Start by rinsing your rice until the water runs mostly clear. Place it in a bowl with about 4 cups of water, cover with plastic wrap, and refrigerate overnight. This softens the rice and lets it soak up that subtle cinnamon aroma.

Step 2: Blend the base
The next day, add the soaked rice, one cup of its soaking water, the pumpkin puree, and cinnamon sticks to a blender. Blend for 1–3 minutes until smooth and creamy.

Step 3: Strain for smoothness
Pour the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher. Strain twice if you like your horchata extra smooth.

Step 4: Add the flavor
Stir in the remaining 2 cups of water, sweetened condensed milk, evaporated milk, milk, brown sugar, and pumpkin pie spice. Mix well until everything is fully combined. Taste and adjust the sweetness if you prefer.

Step 5: Chill and serve
Refrigerate until cold. Serve over ice and garnish with a cinnamon stick or a sprinkle of pumpkin spice for a cozy finishing touch.

• Dairy-free version: Swap the milk for almond or oat milk and use dairy-free condensed milk.

• Less sweet: Use only half the condensed milk or add extra milk to mellow the flavor.
