Single-Serving Brownie Pudding (Inspired by Ina Garten)
If you’re craving something rich, chocolatey, and cozy—but don’t want a whole pan of brownies—this single-serving brownie pudding is perfect. It bakes up with a delicate top and a soft, molten center, almost like a cross between a brownie and a chocolate lava cake. The water bath is the secret to that dreamy pudding texture!
Ingredients
• 2 tablespoons butter (plus a little extra for greasing)
• 1 large egg, room temperature
• ½ cup granulated sugar
• 3 tablespoons unsweetened cocoa powder
• 2 tablespoons all-purpose flour
• ¼ teaspoon vanilla extract

Instructions
1. Preheat the oven to 325°F (163°C).
2. Prepare your dish. Lightly butter a 16-ounce oven-safe ceramic bowl or ramekin.
3. Melt the butter. Melt the 2 tablespoons of butter and set aside to cool slightly.
4. Whisk egg and sugar. In a medium bowl, whisk the egg and sugar together for 2–3 minutes, until the mixture becomes pale and slightly thickened. A hand whisk works perfectly for this small batch.
5. Add vanilla. Stir in the vanilla extract.
6. Incorporate dry ingredients. Sift in the cocoa powder and flour. Gently mix until just combined—don’t overmix.
7. Add melted butter. Slowly whisk in the melted butter until the batter is smooth and glossy.
8. Set up the water bath. Pour the batter into your prepared bowl. Place it inside a larger baking pan. Carefully pour very hot tap water into the larger pan until it comes halfway up the sides of the filled bowl.
9. Bake. Bake for 25–40 minutes. The top should look set, but the center will still be soft and pudding-like underneath.
10. Serve warm. Let it cool for a few minutes, then dig in! It’s incredible on its own or topped with vanilla ice cream or whipped cream.
