Soft & Fluffy Homemade Cinnamon Rolls (Beginner-Friendly)

There is nothing better than the smell of cinnamon rolls baking in the oven. These homemade cinnamon rolls are soft, fluffy, and perfectly gooey in the center with a sweet cinnamon-sugar swirl and creamy icing on top. This recipe is very beginner-friendly, forgiving, and perfect if you’re learning how to work with yeast for the first time.

If your dough looks messy or sticky at first — don’t panic. Cinnamon roll dough comes together during the rise, and that’s where the magic happens.

Ingredients

Dough

• ¾ cup warm milk (105–110°F)

• 2¼ teaspoons active dry yeast (1 packet)

• ⅓ cup granulated sugar

• 4 tablespoons unsalted butter, melted and cooled

• 2 large eggs, room temperature

• 1 teaspoon salt

• ½–1 teaspoon vanilla extract (optional)

• 3–4½ cups all-purpose flour

Cinnamon Filling

• 4 tablespoons unsalted butter, softened

• ½ cup brown sugar

• 2 tablespoons ground cinnamon

Cream Cheese Icing

• 4 ounces cream cheese, softened

• 2 tablespoons unsalted butter, softened

• 1 cup powdered sugar

• 1 teaspoon vanilla extract

• 1–2 tablespoons milk

Instructions

Make the Dough

1. In a large bowl, combine ¾ cup warm milk and 2¼ teaspoons yeast. Let sit for 5–10 minutes until the yeast is active. It may not foam much — that’s okay.

2. Add ⅓ cup sugar, 4 tablespoons melted butter, 2 eggs, 1 teaspoon salt, and ½–1 teaspoon vanilla. Mix well.

3. Add flour 1 cup at a time, starting with 3 cups, mixing until a soft dough forms. Stop adding flour when the dough is sticky but holding together.

4. Knead the dough for 2–5 minutes until soft and elastic. It should still feel slightly tacky.

First Rise

1. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for 1–1½ hours, or until doubled in size.


Assemble the Rolls

1. Punch down the dough and roll it into a 14×18-inch rectangle on a lightly floured surface.

2. Spread 4 tablespoons softened butter over the dough.

3. Mix ½ cup brown sugar and 2 tablespoons cinnamon, then sprinkle evenly over the butter.

4. Roll the dough tightly from the long side and cut into 12 rolls.


Second Rise & Bake

1. Place rolls in a greased 9×13-inch pan. Cover and rise 30–45 minutes.

2. Bake at 350°F (175°C) for 20–25 minutes, until lightly golden.


Make the Icing

1. Beat 4 oz cream cheese, 2 tablespoons butter, 1 cup powdered sugar, 1 teaspoon vanilla, and 1–2 tablespoons milk until smooth.

2. Spread icing over warm cinnamon rolls and serve.


Tips for Perfect Cinnamon Rolls

• Sticky dough = soft rolls. Don’t over-flour.

• If the dough looks messy before rising, that’s normal.

• For extra gooey rolls, pour ¼ cup warm cream over the rolls before baking.

• Use dental floss to cut clean slices.
