Instructions
1. Preheat the oven Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Sugar the surface Sprinkle half of the sugar evenly onto a clean work surface.
3. Roll out the puff pastry Place the puff pastry on top of the sugar. Lightly roll it out so the sugar sticks to the dough.
4. Add more sugar Sprinkle the remaining sugar evenly over the top of the pastry and gently press it in.
5. Fold to create the heart shape
• Fold the left side of the pastry toward the center
• Fold the right side toward the center
• Repeat: fold each side toward the center one more time The two rolled sides should meet in the middle, creating a double spiral.
6. Chill (important!) Transfer the folded pastry to the fridge for 10–20 minutes. This helps keep the heart shape clean when slicing.
7. Slice Using a sharp knife, cut the pastry into ½-inch slices. Each slice should look like a heart.
8. Bake Place the slices cut-side up on the prepared baking sheet, leaving space between each cookie. Bake for 12–15 minutes, then flip each cookie and bake for another 5–7 minutes, until golden brown and caramelized.
9. Cool Let the palmiers cool on a wire rack. They will crisp up as they cool.
